We wish we could take credit for this awesome recipe but we are so excited to share this one from one of our customers out in Arizona, Aymee Buckhannon. If you are new to coconut oil, there are over 100 ways to use this superfood. For centuries the coconut has been referred to as "the tree of life" for its many uses and healing properties.
So why coconut oil? While coconut oil is high in saturated fat, in it’s unrefined, virgin state which contains zero trans fat, can be absorbed easily into the bloodstream. That’s because coconut oil’s saturated fat is made up of MCTs, medium chain triglycerides, that are quickly converted by the body into energy instead of being stored as fat.

Pineapple Coconut Oil Granola
3/4 cup cottage cheese (low fat/high fat your preference, you could also use greek yogurt as well)
1 Tablespoon Coco Calla organic Thailand coconut oil
1 Tablespoon of healthy granola topping
3-4 little chunks of frozen pineapple
Add 1/2 of the coconut oil on top of the cheese (or yogurt) and stir. Then add the rest, and then pour the other 1/2 of the coconut oil on top as it will harden a tiny bit when it hits the frozen pineapple and granola making it crunchy. SOOO YUMMY!
This recipe makes the perfect breakfast (to kick start your metabolism at the beginning of your day) or as a healthy early afternoon snack.
